App Transport Security (ATS) is an iOS feature that requires apps to use secure connections by default. It blocks plain, unencrypted traffic unless the app explicitly adds an exception.
The risk is in those exceptions. An app that turns off ATS, or allows arbitrary loads, can send data in clear. Reviewing the ATS settings shows whether an iOS app has quietly weakened its own transport security.
